A couple of months back, it was our pleasure to attend the Australian Wedding & Honeymoon Expo at Darling Harbour. Our good friends at Sparkling Catering and Events featured Iced Magic cakes as a part of their amazing wedding packages. Maria had an awesome weekend showing off some of our best wedding cake ideas, and provided the event attendees with a taste of (based on the huge amounts of feedback) some of the best tasting wedding cakes around.

Well as you may have noticed we have had some fun issues with little hacker boys taking the site or portions of the site offline. Despite all that the cake is still pouring out of the kitchen and I can once again share some new creations with you.
First up we have a London scene featuring Big Ben, an english telephone booth, and a double decker bus. The ground is all ‘ye olde english’ coblestone. Then we have a 3 Tier 21st birthday cake with a whole lotta bling. Check them out over in the gallery.
It’s Sunday night, and for us the week has finally finished, but in 1.5 hours it will be Monday and it all begins again! It has been a huge week here at Iced Magic. We have another Numark DJ Turntable cake, a 2 Tier wedding cake with some beautiful roses and diamontes, a pink 3rd birthday cake with a farm scene, and an elegant little mickey mouse baby cake.

You know when you spin a coloured wheel around really fast and it all turns white? I have that feeling with cakes at the moment. Cakes baking everywhere, cakes going out, more cakes being made, cake cake cake cake cake. Glad we love cake around here
So the second half of this week is going to be the busiest ever. Between the girls on the cakes and me with everything else in the world going on, I’m thinking 2 hours sleep will be luxury
Well I better stop yapping here and get back to work. So keep an eye out cake fans. Lots to show you at the end of this weekend and I’ll try to give you some sneak peaks along the way if I get time to sneeze.
So yet another week of soaking has passed, and we are staring down the barrell of another one this week. Anyone is Sydney would have been shocked by the dumping of half an ocean we had on us today, not to mention the hail.
Thankfully our cakes went out yesterday in better weather so it wasn’t too bad. Have a look in the gallery to check out the latest additions.
This week is packed out, many cakes to get out the door. At least you can stay indoors and decorate cakes, I feel sorry for people with outdoor jobs this week

As mentioned earlier in the week, Maria was lucky enough to go and see Buddy Valastro, better known as The Cake Boss, on the Lifestyle channel on Foxtel – live here in Sydney.
The evening wasn’t what she expected. It was actually more about Buddy himself, his life and how get got where he is today. The story goes that when he was 11 his father busted him out in the forest with a packet of matches (uh oh), and told him from that minute on he would spend every minute after school and on the weekend at his bakery (Carlos Bakery).
Buddy thought this was a cool punishment, but when he got there he asked his dad what they would be making first. His dad took him to the toilet and told him he was going to clean it. He explained that just because he was the boss’s son he wasn’t going to get any special treatment and he had to start at the bottom just like everyone else. He then spent the next 2 1/2 years cleaning toilets, mopping floors, cleaning dishes/cake pans etc – never, ever touching cake.
Then when he was 13 he picked up a piping bag for the first time, and he said it felt like an extension of himself. Then when he was 15 he told his father he knew he had to be a baker, and his father said that if that was the case, he would teach him everything he knew.
At the age of 16 his father said to him ‘Could you imagine if one of our wedding cakes got into a magazine?’ . To date, Buddy has over 200 wedding cakes alone in magazines.
At the age of 17 his father got diagnosed with cancer and died. He decided to keep the business alive. He then battled problems with the reputation of the business, everyone said the cakes had gone downhill and he had to battle hard to maintain his fathers reputation. He spent every minute of every day 7 days a week in the bakery. He was the first one in and the last to leave.
Years later he got invited to attend a cake competition on the food network, which he didn’t win. He told them to let him know when they were going to do a wedding cake competition and he would come back. A couple of years later they did, and he lost again. The camera man for the wedding competition said that he would make a great TV show, so buddy decided to pitch that to the food network. They told him they already had a cake show and turned him down. Later, Lifestyle put out a call for cake decorators to send in a video of themselves to try to get a spot for a new TV show. He went around his bakery with a camera, talking about his family etc, like the show today, and they signed him up. He now cannot believe to this day how much of a household name his is. Maria was saying he is actually quite humbled by it all, as opposed to the on screen persona he puts out.
The live show itself had some cupcake decorating contents (women competing, then men, then kids) and he also did a competition for the most romantic men to make a sugar rose and present it to their partner in a romantic way. (Apparently very funny results). He also had a Q&A session which he conducted while he was decorating a 3 tier cake.
He said that his worst cake ever was the solar system cake he did. Not that it was bad, but it wasn’t what he had envisioned in his head and he doesn’t like it when cakes don’t turn out how he thinks they will. He said the best cake he ever did was the Bumblebee from Transformers cake.
He also talked about the Nascar cake he made (Full sized replica). He said that if he was to make one for retail sale it would go for around $250-$300 thousand dollars. The structure alone without any cake cost him $30,000 to build.

So I hear boards being prepared and I see cake and ganache everywhere I look. It must be Wednesday already because everything is in full swing for the end of week orders. It’s that crazy time of the week where everything is going on but nothing looks like anything yet We have a wedding cake and a 2D train cake being prepared at the moment.
Looking forwards, February is pretty packed. If you are thinking about a cake for March or April please get in touch with us ASAP to secure the date as things are moving along really quickly.

There is also a close up of the miniature tea set so you can get a real good look at it. Also you will see the latest addition to our offerings – Cookie Pops! They are basically cookies on sticks. It’s a new fad that seems to be picking up because, well, people like food on sticks! They are pretty cute, and we are happy to continue offering them to you if you would like to try some cookie pops one day
Tonight, Maria has been lucky enough to score a ticket to see *drum roll* … the Cake Boss – Buddy Valastro. If you don’t know the Cake Boss, he is an amazing cake decorator (and more) in the U.S. He has his own cake decorating show which can be seen here in Australia on Pay TV as well as a general cooking show. Hopefully Maria will tell us all about it and have a photo or two in the next couple of days so stay tuned for that.
The mad hatter cake is getting there. Here’s a sneak peak at two pieces further along. It’s going to be fun to see it all put together.
